Try this slight variation to the peanut butter cookies for a soft and chewy sweet treat. This sandwich peanut butter cookies recipe is amazingly easy and the perfect dessert for those hot summer days. Each bite is heavenly goodness of two soft biscuits packed with a scoop or two of vanilla ice cream.
Step 1.
Preheat the fan-forced oven to 160°. Line a baking pan with baking paper.
In a bowl combine peanut butter, sugar, baking powder, and salt and mix well. Add the egg and mix to form a dough. If the mixture is sticky, let it rest for 5 minutes and begin step 2 with clean hands.
Step 2.
Divide the mixture into round balls (130-150 grams) and place them onto the prepared baking tray, making sure they are well spaced out. Press down gently to slightly flatten.
Step 3.
Bake in the preheated oven for approximately 10-15 minutes or until just slightly golden in colour. Remove and allow to cool.
Place a generous amount of smooth vanilla ice cream on one biscuit. Top with another biscuit and press gently but firmly until straight and level.
