Notes from Rouba

  • Lentils are often overlooked. They are a great source of soluble fibre, which helps slow digestion, keeping you feeling fuller for longer. Learn more here.

Method

Step 1.

Place the washed lentils in a pot with the water and bring to a boil. Add ½ tablespoon of ground cumin, cover with a lid, lower the heat and simmer for 20 minutes, stirring occasionally.

Step 2.

While the lentils are cooking, prepare the onion. Heat olive oil in a pan, add the onion and fry on low to medium heat until translucent.

Step 3.

After 20 minutes, add the cooked onion and spinach to the lentils. Season with salt and pepper and simmer for a further 10 minutes. Squeeze with lemon juice and drizzle with olive oil before serving.
