These crispy chicken burgers are made with thigh fillets, butterflied for even cooking, dipped in cold batter, crumbed with panko, and fried until golden. Ingredients

For the Chicken

  • 8 chicken thigh fillets, skinless
  • Salt and pepper, to taste
  • 1 teaspoon sweet paprika
  • 1 teaspoon garlic granules
  • Plain flour, for dusting
  • Panko breadcrumbs, for coating
  • Vegetable oil, for frying

Crispy Batter Mix

  • 1 1⁄2 cups plain flour
  • 4 tablespoons cornflour
  • 1⁄2 teaspoon baking soda
  • 1⁄2 teaspoon baking powder
  • salt to season
  • 1 teaspoon sweet paprika
  • 1 1⁄2 cups ice-cold water

Chilli Mayo Sauce

  • 1 cup mayonnaise
  • 1⁄4 cup hot chilli sauce (or tomato sauce for milder heat)

To Assemble:

  • Burger buns, toasted
  • Lettuce leaves

  • I always butterfly the chicken thighs to get that perfect, flat shape for burgers. It makes a big difference.
  • The chilli mayo is easily adjustable—go mild with tomato sauce or up the heat with your favourite chilli.
  • If the batter starts to thicken as it sits, just stir in a tiny splash of cold water to loosen it up.
  • Toasted buns really take this to the next level—don’t skip that step.

Method

Step 1. Prepare the chicken

Trim any uneven parts from the chicken thighs and butterfly them slightly to create a flatter surface. This helps the chicken cook evenly and fit better in the buns. Season both sides with salt, pepper, sweet paprika, and garlic granules. Set aside while you make the batter.

Step 2. Make the batter

In a medium bowl, whisk together the plain flour, cornflour, baking soda, baking powder, salt, and sweet paprika. Gradually pour in the ice-cold water and whisk until smooth. The batter should be thick enough to coat the chicken evenly without running off.

Step 3. Coat and fry the chicken

Set up a crumbing station with three separate bowls: one with plain flour, one with the batter, and one with panko breadcrumbs. Dredge each piece of chicken in flour, dip into the batter, then press into the panko to coat. Heat oil in a deep frying pan over medium heat. Once hot, fry the chicken in batches for 5–7 minutes per side, or until golden and cooked through. Drain on paper towel.

Step 4. Assemble the burgers

Toast the burger buns. In a small bowl, stir together the mayonnaise and hot chilli sauce to make the burger sauce. Layer each bun with lettuce, a piece of crispy chicken, and a spoonful of the sauce. Close with the top bun and serve hot.

A FEW THINGS YOU’LL WANT TO KNOW

Can I use chicken breast instead of thigh?
You can, but chicken thighs are juicier and more forgiving. If using breast, slice them thinner or pound gently to even thickness.

Why does the batter need to be ice-cold?
Great question—and yes, ice-cold water is key to making a light, ultra-crispy batter. Here's why:
🔹 It slows gluten formation
Cold water slows down gluten development, so the batter stays light and doesn’t go chewy or dense.
🔹 It creates a temperature shock
When that cold batter hits hot oil, it sets quickly and puffs slightly—giving you a crispier coating.
🔹 It helps form bubbles
That sudden contrast also forms tiny bubbles, which create a more textured and golden crust.

Can I bake instead of fry?
You can oven-bake or air-fry, but the result won’t be quite as crisp. If baking, drizzle or spray oil generously over the crumbed chicken and bake at 200°C (fan-forced) (390°F) until golden.
