If you’re looking for a deliciously indulgent dessert snack, you can’t go wrong with pistachio delight sandwiches. These treats are made with pistachio rounds that are flattened and topped with a dreamy filling made of ricotta, rose water, and sugar. Another flat layer of pistachio goes on top to complete the sandwich-like structure.
But what really makes these sandwiches special is the pistachio rounds themselves. They’re nutty and crunchy, with just the right amount of sweetness to complement the creamy filling. Trust me, one bite of these bad boys and you’ll be hooked! The combination of flavours and textures is just out of this world.
So if you’re in the mood for something sweet and satisfying, give pistachio delight sandwiches a try. You won’t regret it!
Step 1.
To make the sugar syrup, place sugar and water in a small saucepan over medium heat. Bring to a boil. Add the lemon juice, lower the heat, and boil for approximately 5 minutes until the syrup slightly thickens. Add the rosewater. Remove from heat and cool completely.
Step 2.
To prepare the filling, combine filling ingredients. Cover and set aside.
Step 3.
Combine ground pistachio and sugar syrup. Mix well to form a sticky dough.
Step 4.
Scoop a walnut-size round dough (approximately 10-12 grams) and roll it into a ball. The size of your scoop will very much depend on the size you prefer for your desserts. Place in the palm of your hand and flatten. Repeat with remaining dough.
To ensure they are all the same size, use a cookie cutter, as shown below. The tip here is to dip your fingers in water so the mixture doesn’t stick to your hands.
Step 5.
Scoop the filling mixture over the first layer of the pistachio tartlet and place a second pistachio tartlet on top, resembling a sandwich.
Spoon the remaining filling mixture on top and garnish with rose petals.
