Pistachio and coconut chocolate log is a beloved treat in the Middle East and beyond. Many regions and ethnicities have their unique versions of this no-bake dessert, often enjoyed as a Christmas treat in the shape of a salami roll. I love how versatile and simple it is to make. Just combine all the ingredients, and you’re done!
My boys absolutely love this freezer snack. If I go a few months without making it, they’ll remind me how much they miss it. This dessert is perfect for unexpected guests or when your children’s friends pop over. For more no-bake treats, try my famous biscuit cake or the super easy Arabian milk pudding.

I used mini loaf pans to make these treats, and they turned out beautifully. You can find my recommended mini loaf pans and other favourite bakeware here.
Step 1.
Spray and line 3 x mini loaf pans (14.6 x 7.62 cm) with plastic baking wrap (make sure all 4 sides are lined).
Step 2.
Break the biscuits into small pieces using your hands. Don’t crumble the biscuits.
In a medium bowl, combine all ingredients and mix until well combined and the biscuits are well covered (this is the messy step).
Fill loaf tins with the mixture, pressing down firmly (wet hands if it gets too sticky). Smooth the top and place it in the freezer for 2-3 hours.
After freezing, remove the chocolate log from the lined tin, place it at room temperature for a few minutes, cut it into pieces, and serve.
