Date delight sandwiches are a delicate and delicious sandwich-like dessert rich in Middle Eastern flavours but made with a twist! This sweetened ricotta sandwiched between two layers of dates, pistachio or coconut is simply too hard to resist.

The presentation of this dessert is a beautiful and unique addition to any dessert table or dinner party. Three layers of date tartlets look so pretty, but they are a little challenging to eat.

Ingredients

Ricotta Filling

  • 200 grams ricotta
  • 1 tablespoon white sugar
  • 1 tablespoon rosewater

Dates Dough

  • 250 grams dates pitted and roughly cut (good quality)
  • 1 tablespoon butter (unsalted)
  • 1 tablespoon walnuts finely ground
  • 1 tablespoon desiccated coconut

Garnish

  • slivered pistachio to garnish

Notes from Rouba

  • The traditional filling for these is Ashta. Ricotta is my simplified version. Its texture makes the perfect substitution.
  • Cutting the dough on baking/parchment paper prevents it from sticking.

Method

Step 1.

To prepare the filling, combine the filling ingredients. Cover and set aside.

Step 2.

Combine the date dough ingredients in a small pot over medium heat. Stir until a sticky dough is formed. Scoop a walnut-size round dough and roll it into a ball. The size of your scoop will very much depend on the size you prefer for your desserts. Place in the palm of your hand and flatten. Repeat with the remaining dough. To ensure they are all the same size, use a cookie-cutter. The tip here is to slightly dip your fingers in water, so the mixture does not stick to your hands.

Step 3.

Scoop the filling mixture over the first layer of the date tartlet and place a second date tartlet on top, resembling a sandwich. Spoon the remaining filling mixture on top and garnish with slivered pistachio or coarsely ground pistachio.

A couple of years later, we received the heartbreaking news of Auntie Suad’s passing 🥲🙏🏽It felt as though a part of the story had been left unfinished. A few weeks later, something arrived in the mail that would bring me to tears 😭 There’s more 🤗
