Ingredients
3 cups of self-raising flour
1 teaspoon baking powder
2 tablespoons sugar
pinch salt
2 eggs (lightly beaten)
1 cup of milk
70 grams unsalted butter melted
extra melted butter for cooking

Long-life milk is a substitute for fresh milk
Keep some pancake dry ingredients mixed in a jar and just add wet ingredients on the day.
Method
Step 1.
Sift the flour, baking powder and sugar into a bowl. Set aside.
Step 2.
Mix the eggs, milk and melted butter in a bowl and pour over the dry ingredients, whisking to form a batter. Rest for 10-15 minutes.
Step 3.
Heat a frying pan and brush lightly with extra melted butter. Pour approximately ¼ cup of the batter into the pan. Cook over low heat until golden in colour, turn the pancake over and continue to cook for 20 seconds or until golden.
For toppings; Maple syrup with fresh or frozen berries, Butter & honey, Butter & vegemite, Sugar and a squeeze of lemon, or Jam and fresh cream
