Ingredients

  • 4 chicken breasts, halved lengthwise to form 8 pieces
  • 2 eggs whisked
  • 2 cups (or more) panko breadcrumb
  • handful chopped parsley
  • Salt season
  • 2 teaspoons lemon pepper to season
  • 1 litre of oil for deep frying

  • Use panko breadcrumbs for a crunchier texture. While regular breadcrumbs can be used, panko breadcrumbs have a coarser texture that creates a crunchier coating on the schnitzel. 
  • Make sure to use clean oil. When frying the schnitzel, be sure to use fresh and clean oil. Dirty oil can impart an unpleasant flavour to the schnitzel, so it’s important to use fresh oil to achieve the best taste. Furthermore, make sure that the oil is hot enough before adding the schnitzel. This will help ensure that the coating gets crispy and golden brown without absorbing too much oil.
  • Experiment with different seasonings. For instance, you can try using lemon pepper seasoning for a tangy and flavourful twist. However, if you don’t have lemon pepper seasoning, you can substitute it with other spices or herbs that you prefer or have on hand.

Method

Step 1.

Cut the chicken in half lengthways. Using a meat mallet, pound each piece of chicken until it is an even thickness of about ½ cm.  This will help to tenderize the meat and ensure it cooks evenly.

Season the chicken breasts with salt and lemon pepper on both sides.

 

Step 2.

Place the breadcrumbs and parsley in a shallow dish. Now crack the eggs into a bowl, whisk, and season with salt and pepper. 

Take one piece of chicken at a time and dip it into the egg mixture, making sure it's fully coated. Next, coat the chicken in the breadcrumbs, pressing the breadcrumbs onto the chicken to make sure it's fully coated.

Repeat the process with all the pieces of chicken.

Step 3.

Once the oil is heated, carefully place the chicken in the oil, cooking in batches if needed. Cook for 3-4 minutes on each side, or until golden brown and cooked through.

Remove it from the oil with a slotted spoon and place it on a plate lined with paper towels to drain excess oil.

if this happened now—I would not have let anything stop me. This was for a good cause, but I also believe that everything happens for a reason. The project was meant to be set aside, and I needed to focus on my boys, who were still young.
A couple of years later, we received the heartbreaking news of Auntie Suad’s passing 🥲🙏🏽It felt as though a part of the story had been left unfinished. A few weeks later, something arrived in the mail that would bring me to tears 😭 There’s more 🤗
